Watermelon Salsa
If your family is anything like mine, we make it through about oh, half of a watermelon….and then magically, nobody wants to eat watermelon anymore. Magically. Or is it just MY family?! Well, here is my solution to this summertime happy problem, dilemma, whatever you want to call it…. Turn it into Watermelon Salsa! This salsa is sweet and spicy and simply AMAZING! Its seriously addicting. It tickles your tongue with a pleasant sweetness with a little tart from the onions. Then hits you with a jalapeño kick. Delicious!!
I like to keep my Watermelon Salsa simple using only fresh, easy ingredients. This fruit salsa tastes like summer to me!
For all you doing Whole 30 or plant based diets, watermelon salsa is right up your alley! {just skip the chips ;)
Watermelon Salsa Recipe
Ingredients:
- 6 cups Seedless Watermelon, finely chopped
- 3 limes, juiced {or about 3/4 cup of bottled lime juice}
- 2-3 Jalapeño peppers, seeds removed and finely diced
- 1 1/2 cup red onion, finely chopped
- 1 cup fresh cilantro, finely chopped
- 1 teaspoon salt
Instructions:
Combine all ingredients in a large bowl and stir well. Serve immediately or chill for later. Great with chips, chicken, or fish.
