Summer time is my favorite season. I love all the fun activities, the weather, the food, and just the simple everyday living that the pretty weather brings. Virginia summers can be hot and sticky, but I love it here! During the summer, our family enjoys eating fresh fruits and vegetables grown in the area. {ok, I’ll admit it, I ATTEMPT to grow a garden each year….but its a big FAILURE usually! And this year is no exception. I planted cucumbers, tomatoes, peppers, onions, zucchini, yellow squash….and all that is growing right now are the peppers and tomatoes. blast!! My black thumb strikes again. The ironic thing is my last name is Gardner. haha} So we have enjoyed the produce from local farmers and Davis’s coworkers’ gardens. {apparently, they have green thumbs.} This summer, we’ve been enjoying delicious oven roasted zucchini that is to die for! The recipe is so simple and easy to make, but tastes amazing!
Simple Oven Roasted Zucchini Recipe

Ingredients:
- Fresh Zucchini
- Olivary Olive Oil
- Parmesan cheese
- Salt
- Black pepper
- Garlic Powder {optional}
Instructions:
Heat oven to 375 degrees. Wash and slice zucchini. Place zucchini slices into a large mixing bowl and drizzle with a little olive oil. Then place zucchini slices on a cookie sheet in a single layer. Sprinkle with salt, pepper, parmesan cheese, and if desired, a little garlic powder. Roast uncovered in oven for 10-15 minutes or until tender.
Roasted Zucchini is the perfect simple side dish for about any meal! We love to eat it with spaghetti, marinated chicken breasts, and hamburgers.
