Sour Cream Chicken Enchiladas
I am all about easy when it comes to cooking and preparing meals. Especially dinner. Its our hardest meal of the day! So when I find something that is easy to make, easy on the wallet, and tastes awesome, it totally makes my nights much easier. These Sour Cream Chicken Enchiladas were awesome! Very flavorful and easy to make, thanks to the McCormick® Enchilada Sauce Mix I used. I liked how all the ingredients in the mix were natural and did not contain any MSG.
Sour Cream Chicken Enchilada Recipe
It came together quickly, with little fuss. I did change a couple things to the recipe. I used corn tortillas instead of flour ones, added extra onion and bell peppers and cut out the oil. I served with sour cream and fresh cilantro. Next time, I’ll try using Plain Greek yogurt instead of the sour cream for an even lighter version. There was a lot of extra sauce {which is a good thing!}, but I think next time I’ll serve over rice.Davis, my hubby, was a huge fan of these chicken enchiladas and was asking me to make them again…before we’d even finished dinner!

I had only one packet of the Enchilada Sauce Mix, so I changed the recipe to 5 servings and it changed the recipe for me. Little things like that make my life easier!

My favorite spice is the Mexican Spice, followed by the Asian Spice. They are both good.

Garlic powder!
Their chili powder! (Mmm… I think I will make chili this week now that I think about it!)
I love Cumin! it adds so much to so many dishes.
Mccormick is all I have in my pantry!
I love the Cumin. A yummy spice for a lot of different dishes.
I like the white pepper. I use lots of pepper and for my chicken pot pie I use it so you don’t see the black granules.
The spice I use the most is probably the Garlic Powder but my all time favorite is definitely Cinnamon! Thanks for sharing the recipe and instagram video :)
