Sour Cream Chicken Enchiladas

I am all about easy when it comes to cooking and preparing meals. Especially dinner. Its our hardest meal of the day! So when I find something that is easy to make, easy on the wallet, and tastes awesome, it totally makes my nights much easier. These Sour Cream Chicken Enchiladas were awesome! Very flavorful and easy to make, thanks to the McCormick® Enchilada Sauce Mix I used. I liked how all the ingredients in the mix were natural and did not contain any MSG. sour cream chicken enchiladas

Sour Cream Chicken Enchilada Recipe

It came together quickly, with little fuss. I did change a couple things to the recipe. I used corn tortillas instead of flour ones, added extra onion and bell peppers and cut out the oil. I served with sour cream and fresh cilantro. Next time, I’ll try using Plain Greek yogurt instead of the sour cream for an even lighter version. There was a lot of extra sauce {which is a good thing!}, but I think next time I’ll serve over rice.chicken enchiladas recipeDavis, my hubby, was a huge fan of these chicken enchiladas and was asking me to make them again…before we’d even finished dinner!

I had only one packet of the Enchilada Sauce Mix, so I changed the recipe to 5 servings and it changed the recipe for me. Little things like that make my life easier!

    Love that recipe and have made it for years! I cook it with the sour cream though. Will have to try adding bell peppers! Favorite McCormick seasoning is easy – The Chili seasoning packet. It’s the ONLY chili seasoning I will buy.

    I’d have to say that my favorite go to spice is the Italian Seasoning. Great for soups or marinades. It’s definitely a family favorite.

    My fave McCormick spice has to be Onion Powder. It adds a rich, homey flavor to dishes without overpowering the other ingredients. I use it even when the dish has fresh onion – the Pnion Powder has more of the oniony sweetness than a fresh onion does and helps bring out other natural flavors.

    I love onion powder and garlic powder, especially when I want those flavors and don’t have the real item (or desire) to chop them up! Also love celery salt on my hot dogs, because that’s just what we do in Chicago!!

    My favorite McCormick spice has to be onion powder. I hate chopping onions, but love the flavor it adds to my dishes.
