Cheese Chicken Tortellini Soup
My good friend, Becca, gave me this recipe when Davis was in dental school and I’ve made it and enjoyed it! I tweaked it a little to make it easier and to suit our taste. We tend to like a little stronger garlic flavor so I added more garlic.
The cheese tortellinis are a fun change from traditional noodles in this homemade chicken soup recipe.
Its a great pantry buster and uses tons of canned food! Which is what makes it such a fast and easy meal to make. {psst if you’re looking for more canned food recipes, check this link out for ideas and recipes!}
Just dump in the ingredients and simmer. That’s all there is to this simple cheesey chicken tortellini soup recipe! Its definitely a comfort food.
Cheesey Chicken Tortellini Soup Recipe
2 – 12.5oz Canned Chicken, drained
2 – 14.5oz Canned Chicken Broth
3 – 10.5oz Cans Cream of Chicken Soup
1 – 15 oz Canned Corn, drained
1 – 14.5oz Green Beans, drained
1 – 15oz Canned Carrots, drained
2 cups Water
1 Medium onion, diced
3 Tablespoons Garlic Powder
1 teaspoon Basil
½ teaspoon Oregano
½ cup shredded Parmesan cheese
40-48oz Frozen Cheese Tortellini
DIRECTIONS
In a large pot, combine all ingredients except the Parmesan Cheese and Cheese Tortellinis. Bring to a boil over medium heat, stirring constantly. Simmer for 20 minutes and then add Parmesan Cheese and Cheese Tortellinis. Simmer for another 10 minutes. I like to serve with this soup with rolls or breadsticks.
