Healthy Halloween Dinner

Tonight is the big night! Are your trick-or-treaters ready? Better question is, are the costumes ready? ha! I think we are about there. Last night we carved pumpkins, picked up an extra bag of candy, finished up Davis’s ninja turtle costume, and made our Halloween dinner since we will be at a Halloween party for dinner tonight. We have been trying to eat healthier and this was our Halloween dinner for this year.

We had Witch Hair spaghetti topped with Jack-o-Lanter Sauce served with sides of Mummy Toes and Sliced Snake. And let’s just say, I had to force the boys to try one bite! I think the whole “witch hair” thing sorta freaked them out. LOL Plus they’re not a fan of the pumpkin sauce. Which let me tell you, is amazing! Its from Costco and so are the black bean noodles. Actually, the whole meal came from Costco! I didn’t plan that, but you can tell where I like to shop. hehe

My boys love the mini cucumbers they have. So they worked perfect for adding some green to the mix. If you didn’t notice, I got all the Halloween colors in there; orange, black, white, purple, and green. {pat on the back}

This is definitely a healthier Halloween dinner and probably not as kid friendly, as I found out. Davis and I enjoyed it, but they didn’t.

Anyways, just thought I’d share my healthy Halloween meal with you. I was proud of it, although my kids thought I was literally feeding them witch hair. Which was pretty funny….for a few minutes…until I realized they were serious…and had no intentions of eating the stuff. {sigh} So much for being clever and healthy, right?!

So there you have a healthy adult meal option for Halloween! haha!
